After harvesting, ripe coffee cherries are brought to the factory by smallholder farmers for wet processing, where the skin and pulp are removed. This process relies on electrical pumps to bring water from the nearest source into reservoir tanks. To conserve water, the factory recirculates it during processing. A disc pulper with three sets of discs is used to separate the skin and fruit from the green coffee beans. Following pulping, the coffee ferments overnight to break down sugars, then it is cleaned, soaked, and spread on raised drying tables. The drying time varies based on climate conditions and the volume of coffee being processed.
